Stuffed Peppers

Trying to add more vegetables to meals can be a bit of a challenge, especially when you’re a student and/or a mom. For this reason, finding simple recipes that that can be made ahead of time and packed for week-long lunches is key. Peppers are at times an overlooked vegetable. They can be added to many meals and with some meat, rice, and spices they can make up the bulk of the main meal. This is a recipe that also gives you some leeway for change. For example, if you don’t care for bacon you can always substitute it for ham, chorizo or any other smoked meat that might tickle your fancy. The same can be said for the rice which can be white, brown, wild or any variation of the three. The point is with this recipe, much like any other, being creative is not only an option it is encouraged.

Makes 5 Stuffed peppers
INGREDIENTS:
5 medium to large peppers (any color)
1 small red onion (chopped)
1 lb of lean ground beef
½ a package of bacon or chorizo (cooked and cut into small pieces)
1 cup of cooked rice
2 tbsp of olive oil
2 tsp of garlic powder
1 tsp of paprika
1 tsp of chili powder
½ tsp of cumin
Salt and pepper to taste
Grated cheddar cheese for topping
DIRECTIONS:
Preheat oven to 350 F
Cut off the tops of the peppers, clean out the inside of any seeds and chop up any usable parts from the tops that you have cut off.
In a pan heat olive oil and sauté chopped onions.
Add beef and cook thoroughly.
Add Bacon, rice and chopped up pepper tops, cook for a few minutes until chopped peppers begin to soften.
Add spices and salt and pepper, mix well.
Fill the five peppers evenly and top with cheese.
Place in a tray and pop in the oven for about 20 minutes or until cheese is fully melted and peppers soften slightly.
Remove from oven and serve on their own or with another side of your choice. These are also great as lunch and reheat well in a microwave. This is especially true if you don’t overcook the pepper.
These can be made on a Sunday night and packed up for meal prep for the week or just enjoy them on a night in with friends.
