Ask and you shall receive!.....salsa chicken.

One night out of desperation I looked in the freezer and thought "oh God what can I make today?". I found some chicken breast and began to season it, but what else could I do to it? All of a sudden I had an idea! I had a few jars of homemade salsa and some brown rice so I covered the seasoned chicken in salsa and stuck it in the oven, then cooked the rice. When the chicken was just about done I added cheese on top and let it melt then added the chicken on to a bed of rice and it was a hit. It became one of our favourites. Now we make it all the time and it's ridiculous how easy it is. It's also a grea option for the slow cooker. As they say necessity is the mother of invention and some times tossing stuff together just works out beautifully.
Here's the recipe:

(In this picture I did not add cheese. It is at this point that you can choose to add it.)
Ingredients
3-4 boneless, skinless chicken breast
1tbs of garlic powder
1ts of salt
1/2ts of black pepper
1 jar of your favorite salsa (I used homemade but any you like will do great)
Some grated cheddar cheese
2 cups of long grain brown rice
5 cups of broth (veg,beef or chicken)
Preheat oven to 400 degrees
In an oven safe tray, lay out the chicken breasts and season with salt, pepper and garlic powder on both sides.
Cover chicken with salsa and place in oven to bake 45 minutes or until internal temperature is 165 Fahrenheit
While the chicken cooks add the 5 cups of broth to a boil then add rice. Bring to a boil again then put on medium low and cover until the liquid is all gone.
When the chicken is done add as much or as little cheese as you'd like and put it back in the oven till the cheese is melted.
Serve chicken on rice and enjoy!
